My family's favorite recipes.

So there are some things we eat often at our house, that others may never even heard of. Some of these recipes are ones we ate more often when I was little (before we went to a low-carb diet), and others are more recent.
Shepherd's Pie.

Ingredients:
5 lbs potatoes.
8 oz cheddar cheese
1 lb hamburger
2 cans (16 oz) Diced Tomatoes*
2 cans (16 oz) Green Beans*
Bag of frozen corn*
Butter and seasonings.

*You can use any vegetables you like, just make sure they are soft. These veggies are just tho ones we used most often.

Directions:
1. Peal, wash, and chop the potatoes. Throw them in water to boil. Add salt.
2. While potatoes are boiling, cook up the hamburger with salt and pepper. Preheat oven to 400 degrees.
3. Drain the potatoes when soft, and mash until smooth. Add butter for flavor.
4. Open and pour cans in with the hamburger. No need to drain the cans. Put hamburger and veggies into bottom of 9x13.
5. Spread potatoes as a second layer, scatter pats of butter over the potatoes, sprinkle the cheese over  the top, and put into preheated oven. Cook for approx 30 min, or until cheese is melted and veggies are bubbling.
6. Serve hot and enjoy!

 

Cucumbers w/ Cream Cheese and Ham.

Ingredients:
Cucumbers
Cream Cheese
Ham

Directions:
1. Slice the cucumbers, and chop the ham into small squares.
2. Spread cream cheese on the cucumber slices, top with piece of ham.
3. Serve immediately, or cover with plastic wrap in fridge for a later time. Enjoy!

Apple Noodle Kugel

Ingredients:
1 lb egg noodles
3 large apples
1 small onion
1/2 container(12 oz) Cottage Cheese
3 T Butter
2 T Brown Sugar
Cinnamon

Directions:
1. Cook the noodles till soft.  Drain
2. Meanwhile, slice the apples, and chop the onion.
3. Melt butter on stove-top, then add apples and onions, and cook over medium heat.
4. Add brown sugar and cinnamon to the apples, and continue to sautee until apples are soft.
5. Combine noodles, cottage cheese, and apples.
6. Enjoy!*

*Another fun option for this recipe would be after you combine all ingredients, to place in a 9x13, add come cream, sprinkle with more brown sugar, and bake until it had a little crisp.
